Muffins low in sugar and fat, but high in vitamin-rich fruits and vegetables, make a smile-friendly breakfast or afternoon snack for your children or even yourself. Pair them with calcium-fortified, unsweetened milk or yogurt (dairy or plant-based).

Berry mouthwatering blueberry muffins

You’ll never taste the difference, but these moist, fluffy muffins are healthier because they’re made with whole-wheat flour. And they’re loaded with tasty blueberries — an antioxidant superfood! The blueberries and whole-grain fiber both work to help fight gum disease.

Ingredients

  • ½ cup lightly packed light brown sugar
  • 1 tablespoon baking powder  
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • 1 ½ cups plus 1 tablespoon whole-wheat flour
  • 1 cup nonfat milk
  • ¼ cup melted and cooled unsalted butter
  • 2 large eggs
  • 2 teaspoons pure vanilla extract   
  • 1 cup fresh or frozen blueberries

 

Directions

  1. Preheat oven to 400 degrees. Lightly coat a muffin tin with nonstick spray or line with paper liners.
  2. In a large bowl, mix brown sugar, baking powder, cinnamon, salt and flour.
  3. In a separate bowl, whisk milk, butter, eggs and vanilla.
  4. Make a well in the center of dry ingredients, add wet ingredients to the well, then stir until blended.
  5. Toss blueberries with the remaining tablespoon flour, then fold into batter.
  6. Divide the batter among the muffin cups. Bake for 18 to 20 minutes or until golden brown.  
  7. Remove from oven and let cool in the pan for 10 minutes. 

 

Banana muffins

Bananas are Americans’ favorite fresh fruit. Try them in this recipe, which keeps the sugar levels low by using just two bananas and a sugar substitute.

 Ingredients

  • 2 mashed ripe bananas (about 3/4 cup)
  • 2 tablespoons canola oil
  • 1 egg
  • 1/2 cup skim milk
  • 3/4 teaspoon vanilla extract
  • 2/3 cup whole-wheat flour
  • 1/2 cup quick-cooking oats
  • 1/4 cup sugar substitute, such as Xylitol or Stevia
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts
  • Cooking spray

     

    Directions

    1. Preheat oven to 375 degrees.
    2. Combine bananas, canola oil, egg, milk and vanilla in a medium bowl; mix well and set aside.
    3. In a separate small bowl, whisk together flour, oats, sugar substitute, baking powder, ground cinnamon and salt.
    4. Stir the flour mixture into the banana mixture until they are just combined.
    5. Add in chopped walnuts.
    6. Spray muffin cups with cooking spray, or use paper liners, and spoon batter into each.
    7. Bake 16 minutes or until a toothpick inserted in center comes out clean.

     

    Easy broccoli, cheese and egg muffins

    Here is a clever hack to ensure your children eat their vegetables: hide healthy broccoli and the like in savory muffins. Your kids will find this nutritious treat fun and tasty without realizing they are getting broccoli with teeth-strengthening calcium and Vitamin C for healthy gums.

     

    Broccoli Cheese Muffins

     

    Ingredients

  • Olive oil cooking spray
  • 1 cup broccoli, chopped
  • 8 eggs
  • 1/4 cup unsweetened coconut, soy or almond milk
  • 2 teaspoons thyme
  • 1/2 teaspoon sea salt
  • 1 teaspoon pepper
  • 3/4 cup Monterey Jack shredded cheese
  • Directions:

    1. Preheat oven to 350 degrees.
    2.  Spray a 12-cup muffin tin with cooking spray.
    3. Add broccoli to the muffin tin.
    4. Whisk eggs, milk, thyme, salt and pepper in a large bowl.
    5. Spread egg mixture evenly into the muffin tin, filling each spot about 3/4 full.
    6. Top each muffin with cheese.
    7. Bake for 20 minutes.
